Yes, I love cheese. There I said it. Those weird soy cheeses from the store just don't cut it...and also, besides not being very healthy, they really don't taste very good. As an experiment tonight, I tried baking some of my Raw Sour Cream Sauce on a quickie pizza just to see what happened. Well, this is what happened:
It turns out that this is a super tasty and satisfying cheese replacement. I tried it again recently on a pizza crust instead of a tortilla and it looked like these (it even got those lovely brown spots like real cheese pizza!):
With delicious whole foods options like this, it continues to boggle my mind why vegan restaurants serve so many "fake" products, like weird fake meats and awful soy cheese, when there are so many good homemade alternatives. The sauce actually formed a skin on top and looked surprisingly like cheese! Hallelujah!! I am no longer a slave to delicious cheesy pizzas! No, it didn't do that cool string-y thing that cheese does, but it really tasted like a good cheese pizza. The sauce firms up a lot during cooking, but it's still a nut sauce so don't expect this to have the same texture as cheese either, it's really more like a paste beneath the skin. However, it really was quite tasty and I felt very satisfied, it's worth giving it a try! I made it on one of those handy sprouted grain tortillas so this was a super quick meal. Paired with a quick salad, you're golden for a nutrient packed, easy dinner that is light enough to leave you feeling like you're still in fighting shape afterward!

Ingredients for Pizza with Crust:
1 recipe for pizza dough to make one 12" pizza
Tomato sauce or pesto
Toppings of your choice
1 recipe of Raw Sour Cream Sauce
~OR~
Ingredients for Tortilla Pizza:
1 sprouted grain tortilla (I use Ezekiel brand)
1/2 cup prepared tomato sauce (see suggested recipe below)
1/2 cup Raw Sour Cream Sauce
Handful of fresh basil, chopped
Your choice pizza toppings (I used zucchini, heirloom tomatoes, and cherry tomatoes).
Directions (same for both pizza types):
- Preheat oven to 375 degrees.
- Spread tomato sauce evenly onto the tortilla and place toppings on pizza
- Drizzle Raw Sour Cream Sauce on top to evenly coat.
- Top with chopped basil (or any herbs!) and place pizza on a bread stone or metal baking sheet.
- Bake for ~7-12 minutes, or until sauce has formed a nice, firm skin on top and the tortilla is crispy.
Blend the following:
1 small tomato, chopped
1 cup of cherry tomatoes
1 tblsp nutritional yeast flakes
1/2 -1 tblsp olive oil
1/4 tsp salt
>Optional, 2 tblsp of sundried tomatoes (pre-soaked), if using sundried tomatoes packed in oil, omit the olive oil
