When you want a salad that is truly a side, or perhaps you are in need of simple, cleansing bed of greens, this lemon dressing is perfect. The flavor is not so strong as to overpower any other dish, and it has a lovely glossy vibrancy from the lemon juice and oils!
I love this dressing over some fresh, tender butter lettuce from the farmer's market with thinly sliced cucumber and carrot, and sweet cherry tomatoes. I use this simple salad as an accompaniment to Indian and Mediterranean meals. You could also use it over steamed cauliflower or rice and steamed veggies.
*If you don't have a lot of different oils to use, using just one type is fine!
Lite Lemon Dill Dressing (1 medium salad which is 2 big servings, 4 small servings)
Ingredients:
3 tblsp fresh lemon juice
1-2 tsp maple syrup (or sweetener of your choice)
4 tsp of oil as follows:
[2 tsp hemp oil (or olive oil) + 1 tsp walnut oil + 1 tsp almond oil]
1/4 tsp dried dill or 1/2 tblsp fresh
1/2 tsp nutritional yeast flakes
Dash of sea salt
Directions:
- Whisk ingredients together in small bowl and serve over your favorite veggie ingredients!
